The spit then turns for many hours – for ours, around 6-8 – allowing the meat inside to create a baste and get extra juicy and tender with every single turn. It means no dry bites anywhere in your roast, and also a perfect balance of crisp texturing with tender meat as the skin outside gets a lovely charring from the fire, turning it an excellent golden-bronze hue with plenty of crunch and flavour.
